Daniel Picard, founder of Épices du Guerrier, spent over twenty years traveling the First Nations of Quebec. During his travels he had the privilege of visiting more than thirty Indigenous communities where he formed lifelong friendships as well as created wonderful memories, the most beautiful of which is the meals where everyone is always treated as a guest of honor.
The First Nations cuisine consists of a rich tapestry of indigenous ingredients traditionally farmed and foraged from the local landscape. The ingredients such as Peppers from the Dunes of which the aroma has been described as the perfume of the forest or Myrical gale with leaves and buds that have a nutmeg taste, allow for an incursion into the heart of the territories where one discovers a rich ancestral land full of flavors and aromas.
Upon experiencing all these wonderful flavors and tastes, Daniel decided to create a link, based on the empirical knowledge he gained during his travels, that would unite the gastronomy of the native land while pleasing the Allochthones.
